Producer Profile
The producer makes six wines:
- Cervaro della Sala
- Cepage: 90% Chardonnay and 10% Grechetto
- Aging: ages for 5 months in barriques and then matured for 10 months in the Medieval cellars of the Castle
- Soils: soils rich in marine fossils and interlaced with strata of clay
- Pinot Nero
- Average Annual Production:
- Cepage: Pinot Noir grapes
- Aging: aged for 8 months and for the remaining 15 months in bottles of the Castle cellars
- Conte della Vipera
- Cepage: Sauvignon Blanc grapes with a small additional percentage of Semillon
- Aging:fermented in wood and aged in bottles for several months
- San Giovanni della Sala
- Cepage: made from the grape varieties typically used for Orvieto Classico (Procanico, Grechetto, Pinot Bianco, Viognier and Riesling)
- Yield per hectare: particularly low (less than 3 tons per acre)
- Bramito del Cervo
- Cepage: Chardonna grapes whose varietal features are enriched by the process of alcoholic fermentation in barriques
- Aging: grapes are chilled as soon as they were picked and then chilled and placed in special tanks. They then ferment in 60 gallon Allier and Troncais barrels
- Muffato della Sala
- Cepage: blend of 60% Sauvignon Blanc, 40% Grechetto, Traminer and Riesling
The Estate:
- Area under vines: surface area of 500 hectares
- Soils: clayey soils rich in Pliocene-epoch fossils of volcanic and sedimentary origin
