A typical Languedoc red wine is medium-bodied and emphasises fruitiness. The best examples tend to be a bit more robust, featuring deeper, savoury aromas enriched with notes of spice, earthiness, and leather. These wines are crafted from classic southern French grape varieties, including Grenache, Syrah, and Mourvèdre, often with a touch of Carignan or Cinsault.

The white wines in this appellation are crafted from Grenache Blanc, Clairette, and Bourboulenc grapes. Occasionally, they also incorporate Rhône Valley varieties like Viognier, Marsanne, and Roussanne. In a unique instance, as seen in Picpoul du Pinet, the lesser-known local grape variety Picpoul is employed. As for the rosé wines, they primarily feature the prominent red grape varieties, often with a touch of white grape varieties for added complexity.
